It provides the campus community and guests with high-quality, efficient, and innovative event services and dining options in a variety of settings dedicated to accentuating and enhancing the campus experience in a diverse community. Event Management, Dining, and Hospitality is committed to providing an outstanding dining experience for students. This position plays an integral role in accomplishing this goal by overseeing all culinary aspects of a single residential operation. Persons in this position assist with menu planning, recipe creation, food and supply ordering, development of food preparation processes and standards, and maintenance of kitchen. This position trains and supervises production staff that utilizes a broad range of culinary skills and equipment to prepare fresh and delicious menu items and frequently participates in display cooking, utilizing woks, salad preparation, grilling, and pizza making to enhance our customer's experience. (A) Associate degree in the culinary arts or (B) other types of vocational training in the culinary arts (such as apprenticeship programs) and/or skilled work experience (such as an assistant chef) in large-scale cooking in a variety of food areas (meats, baking, desserts, salads, sauces, etc.) and in a variety of cuisines (European, American, Asian, etc.) that provided a knowledge of food science, food service management, food sanitation, and the culinary arts and their practice equivalent to that provided in the programs identified in A or (C) combinations of (i) college credit in the culinary arts short of an Associate degree and (ii) vocational training and/or work experience described in B that provided preparation equivalent to that identified in 1A 2. Five years of progressively broader and more responsible work experience in food production in addition to the training/experience listed in 1. The experience must have included work in a variety of cuisines, quality standards, cost controls, recipe development, catering, and food styling. Two years of the experience must have been as a chef in a large commercial or institutional operation. 3. If this position is Security Sensitive or if you are subject to a criminal background investigation based on University policy, employment is contingent upon you passing a satisfactory criminal background investigation. You may not begin work until the criminal background investigation results have been received and cleared by Human Resources. Desired Qualifications: 1. Full knowledge and acceptance of diversity principles. 2. Interpersonal and communication skills; flexibility; customer service skills. 3. Ability to supervise and train employees, to include organizing, prioritizing, and scheduling work assignments. 4. Knowledge of automated menu and inventory management systems such as CBORD Food Service Suite. 5. Ability to plan a variety of menus. 6. Ability to develop and test recipes and/or techniques for food preparation/presentation. 7. Ability to read, understand, follow, and enforce sanitation, HACCP and safety procedures. 8. Skill in cooking and preparing a variety of foods; culinary degree or certification preferred. 9. Knowledge of catering set-up procedures. 10. Ability to coordinate quality assurance programs in area of specialty. 11. Possess Illinois Food Service Sanitation Certification or must obtain.
